A day old Banana Cake becomes a Dessert…

This is a little update on what I do when I am in a pinch for a dessert and company is coming. I usually keep my Banana Cake in the refrigerator after the first day when it is baked…and then it goes into the freezer.
It freezes really well…
If the cake was frozen I thaw it over night in the refrigerator or at room temperature, I have even popped it into the Microwave oven, and have it ready in time for dinner and company.
Here is how I assemble the banana cake
and make it into a dessert
You will need….
One day old Banana cake slices – 1 slice per guest
Vanilla or Chocolate Ice Cream
Whipped Heavy Cream
Dried Apricots cut into small squares for decoration
Powdered Sugar
Cut each slice into geometric pieces, either rectangular or triangular pieces… stack them on your desert plates, top it off with a dollop Vanilla or Chocolate ice cream and decorate with some whipped cream and the little apricot squares….
Sprinkle with powdered sugar as the last touch for perfection….
And…your quick desert is ready for your guests….
This kind of dessert can be also made with pound cake, sponge cake and some soft cookies…
Your dessert your guests will swoon over!
